A Burst of Sunshine: Summer Citrus Salad Recipe

Updated: Jul 30

Summer is in full swing, and there's no better way to celebrate the season than with a refreshing, vibrant citrus salad. Picture this: juicy mandarin oranges, sweent and tangy dressing, salty parmesan cheese, all mingling together in a symphony of flavors that will dance on your taste buds.

This summer citrus salad is not only a feast for the eyes but also a delightful escape from the heat, offering a cool, crisp bite with every forkful. Whether you’re hosting a backyard BBQ, enjoying a picnic in the park, or simply looking for a light, healthy dish to brighten your day, this salad is your ticket to sunny bliss. Let's dive into the recipe and bring a burst of sunshine to your table!

Ingredients:

  • Belgian Endives (they are a type of CHICORY, so they taste a bit bitter but perfect with the dressing I made)

  • Mandarine Oranges (you can use oranges as well)

  • Snap Peas (I put them raw because I love the crunchiness, but you can saute them before if you prefer)

  • Micro greens

  • Parmesan Cheese

For the dressing:

  • 2 tbsp Mandarin oranges juice

  • 2 tbsp Honey

  • 1/2 tsp Sea salt

  • 1/4 cup Olive oil

  • 2 tbsp Lemon juice
