My big boy turned 5 and just writing it makes me so emotional. It's been a journey moving countries almost every year of his life and I get so much anxiety thinking how could this lifestyle affect him. We were living in Portugal on his first birthday, the second one we were in Jacksonville FL, 3rd and 4th in Toronto and now in Nashville. I'll dedicate another post with photos of the other parties just for fun, but here's this year's one.
Every year we really try to do something special and I love playing with balloons and decorating. This year his party was at school with his friends, but because of COVID restrictions, parents were not allowed in the building, so because we couldn't be there, we had to do something at home as well to celebrate.
This year's theme was Dinosaurs and he wanted to make homemade pizza, so we had a pizza night. I separated the ingredients and made this super easy fast rise dough:
Pizza Dough
2 cups of All Purpose Flour (some more for when you're opening the dough)
1 1/2 teaspoon of sugar
3/4 teaspoon of salt
2/3 very warm water
3 tablespoons of olive oil
1 packet of fast rise pizza crust yeast by Fleischmann's
Preheat oven at 425F. Combine 1 cup of flour with yeast, sugar and salt in a large bowl. Add water and oil mixing until blended. Add slowly the remaining flour until soft dough. Knead on a floured surface adding additional flour if needed (more or less 4 min). Roll dough and top with your favorite ingredients.
