No matter where you're from we can all agree that Summer food should be light and refreshing. But that's no reason to be boring with your normal lettuce-tomato-chicken-store-bought-salad-dressing. This Caprese Chicken Salad with Avocado takes literally 10 minutes to make and it's super delicious not only to enjoy it by yourself, but it's something I make to impress my girlfriends whenever they come over to visit. It's that dish that will have you looking like you went through a lot of trouble.


Ingredients:

For the chicken:

Chicken Breast

Lemon

Salt

Pepper


For the salad:

Cherry Tomatoes (i love these ones with different colors)

Mozarela

Crumbled Feta Cheese

Avocado

Basil

Balsamic Vinegar

Extra Virgin Olive Oil

Salt and Peper

Dijon Mustard

Honey


Season chicken with lemon, salt and pepper and grill it until its gold on th outside and fully cooked on the inside. Set aside. Mix tomatoes, mozzarella, crumbled feta cheese, basil and avocado. In another container mix honey, Dijon mustard, extra virgin olive oil, balsamic vinegar, salt and pepper. Mix everything together and serve. Enjoy!






Yes way Rosé!! This refreshing Summer drink will leave you feeling oh so fabulous!


What you'll need:

A bottle of your favourite Rosé (I used XOXO Rosé)

Fresh berries for garnish


For the Raspberry Lemonade Sorbet:

  • 1 lb of frozen raspberries

  • 3/4 cup sugar

  • 1/4 cup water

  • 1/2 cup fresh lemon juice

  • 1/4 tsp salt

  1. Process the berries in a food processor until no whole fruit remains.

  2. In a small saucepan over medium-high heat, combine the water and sugar, stirring frequently until the sugar melts.

  3. Combine the raspberry puree, sugar syrup, lemon juice and salt. Pour the mixture into a large baking aluminium pan and put it in the freezer.

Instructions

To make one drink, place a small scoop of sorbet into a Rosé flute, top with more Rosé.  Garnish with fresh berries.  Serve immediately.
